
Recipe of the Month: April
The JTH nutritionist, Lainie, is going to find a healthy recipe that we will feature the 4th week of each month.
People often ask for specific recipes that they can make, rather than just encourage healthier eating. Here is the recipe for April:
Raspberry Mango Chia Seed Smoothie
Servings: 2
Nutrition per serving: 330 calories, 10g protein, 53g carbs, 10g fat
Ingredients:
- 1.5 cups frozen mango, chopped
- ½ cup frozen raspberries
- 1.5 cups unsweetened coconut milk (can use any type of milk)
- ½ cup Greek yogurt
- ⅓ cup chopped, pitted dates
- 1.5 tbsp chia seeds
- 1 tbsp vanilla extract
Instructions:
- Combine all ingredients in a blender and process until smooth & creamy (~2 minutes)
- Divide into two and serve.
