The JTH nutritionist, Lainie, is going to find a healthy recipe that we will feature the 4th week of each month. People often ask for specific recipes that they can make, rather than just encourage healthier eating. Here is the recipe for June:
Breakfast Sandwiches
Servings: 1 sandwich
Servings per recipe: 6
Nutrition/serving: 475 cal, 25gP, 25gC, 30gF
Ingredients
- English muffins – 6 (1 pack)
- Eggs – 6
- Egg whites – 151g
- Cottage cheese – 165g
- Sharp cheddar cheese – 6 slices
- Green onion (optional)
Instructions
- Preheat oven to 385
- Blend egg, egg whites & cottage cheese
- Pour into a baking sheet and cook until solid (about 15-18 min)
- Assemble sandwiches w sausage, egg & cheese
- Wrap in foil and store in fridge, reheat in microwave
